Hi ariopax,
If you have a look in documentation TIWCGJQPivotLocaleFile Class you will see how to create your own language locale file .
BUT !!
This apply only on jqptPivotUI type , if you use jqptSimple, text is forced by pivot.js file at line 647to "Totals"
